A Marrickville roaster doing something almost no-one else does in Australia: roasting coffee over wood fire rather than gas. Founded by Ali and Ella, whose Italian family has been wood-roasting coffee since 1905. The product range is built around the method — the Honduran (chocolate, macadamia, raspberry), the Elixir (dark chocolate, toffee, hazelnut), Soul Mate, Mio, Eclipse, an Organic and a Decaf — sold by the kilogram with subscription options. The position the operators take is technical and unambiguous: gas roasting is faster and more profitable; wood roasting is the older method and gives a different result. The roastery is open daily 9am–4pm for retail pickup. Gold medals at Fine Food Australia in 2016, 2017 and 2018.
